I know every recipe says it’s the “best” and “easiest” but seriously, these are the best and easiest baked sweet potatoes.

These are perfect for meal prep. I like to make a batch on the weekends and then they’re easy to grab for lunch, add to dinner as a side, or plan a meal around.

Ingredients for Perfect Baked Sweet Potatoes

All you need is:

  • Sweet potatoes (as many as you want, I like to bake 5 at a time, which makes 10 halves)
  • olive oil
  • salt and pepper (to taste)

How to Make Perfect Caramelized Baked Sweet Potatoes

The process is simple, and most the time is just the cook time when you can be doing other things:

  1. Wash and dry sweet potatoes.
  2. Slice in half.
  3. Line a baking sheet with aluminum foil, drizzle with olive oil and place potatoes in the pan.
  4. Season with salt and pepper and rub the potatoes all over so they’re coated with olive oil, salt and pepper.
  5. Lay cut side down and bake for 30-45 minutes, checking doneness with a fork. When it pierces the potato easily all the way through, it’s done.
  6. Let them cool completely then store in an airtight container in the refrigerator.
