How to Make the Best Buttery Garlic Oven Roasted Potatoes
I love how easy this recipe is to throw together, then you can just let it cook while you do other things! Get the full recipe in the recipe card below. Here are the easy steps:
- Preheat oven to 425 degrees. Cover a baking sheet with parchment paper or aluminum foil.

- Wash and dry the potatoes, then cut them into bite-sized pieces. I like to do them in quarters, or if they’re already small, halves.
- Add cut potatoes to a large bowl with olive oil and toss to coat.
- In a separate small bowl, melt butter then add garlic powder, parsley, salt, and pepper. Drizzle this over the potatoes and mix to coat well.

- Spread potatoes on the baking pan in one layer. Bake for 30-40 minutes, flipping potatoes halfway through. Oven times may vary, so start checking at the 30-minute mark to see if they pierce easily with a fork and are browned. Toss to make sure they’re all coated in the buttery mixture and serve warm.

How to Reheat Roast Potatoes
Roasted potatoes reheat well in the oven or toaster oven. Preheat the oven (or toaster oven) to 400. Line a baking sheet with parchment paper and spread the potatoes in an even layer. Reheat for 5-10 minutes or until warm.
You can also reheat these in the microwave, but they will lose their crispiness.
