  • Minced Garlic (or 2-3 garlic cloves finely diced)
  • Dijon Mustard
  • Fresh lemon juice
  • Extra Virgin Olive Oil
  • Salt & Pepper (to taste)

How to Make This Garlic Dijon Asparagus Recipe

You will love how easy this recipe is! As a busy mom of 3, it’s a winner in my book just for ease (not to mention tastiness). Get the full recipe in the recipe card below. Here are the easy steps to asparagus perfection:

  1. Trim asparagus ends off.
  1. Place asparagus in a large ziploc bag.
  2. Add olive oil, garlic, dijon, salt and pepper.
  3. Close the bag and mix around the asparagus inside the bag to fully coat it and mix up the marinade.
  4. Place in the refrigerator for at least 1 hour or overnight. (I sometimes throw this in the refrigerator early in the day while kids are at school to cook later that evening.)
  1. When ready to cook, preheat oven to 425 degrees F.
  2. Line a baking sheet with parchment paper.
  3. Dump asparagus and marinade from the bag onto the parchment-lined baking sheet in one flat layer.
  4. Bake for 12-15 minutes or until a fork can easily pierce the asparagus.

How to Store Leftover Cooked Asparagus

Store leftover asparagus in an airtight container in the refrigerator for up to 3 days. Since this recipe makes a big batch, you will likely have leftovers. As a busy mom, I love this because I use it as a veggie side dish two nights in a row.

  • 2 tbsp Minced garlic or 2-3 garlic cloves, finley diced/crushed
