Over the past few weeks I have perfected this easy parmesan truffle fries recipe, and it all started when I was in the grocery store with my middle school son and he said, “Hey mom, can you make parmesan truffle fries?” I picked up some white truffle oil and said, “We’ll figure it out!” And boy did we! Now, my entire family is obsessed and as the cook and dish washer, I love how easy they are! I make mine in the air fryer so they are healthier and there is no mess from deep frying.
Don’t be intimidated by making your own homemade fries because I am going to show you the easiest, fail-proof method! You’ll be making your own fries at home with amazing flavor on repeat. Let’s dive in and learn how to make fries that are next level!

These Parmesan Truffle Fries are My Family’s New Obsession, and they will be yours, too!
Sometimes my kids ask for the most random things in the grocery store, but my middle school son asked for parmesan truffle fries one day when he came with me to the store, and that’s where it all started. I told him we’d pick up something with truffle oil in it and “figure it out”. We found some white truffle oil and picked up some potatoes (knowing I had parmesan at home), and went home to experiment.
I don’t deep fry anything (minus frying eggplant in my cast iron skillet for eggplant parm) because it’s such a mess and my husband doesn’t eat “fried food”. So, it had to be the air fryer. I did a little research on making classic french fries in the air fryer, and then got to work. I’ve now made this recipe over and over, perfecting my methods until I was ready to share it with you. I am confident when I tell you this is the absolute best way to make delicious truffle fries.
Trust me when I say, these homemade truffle fries will hook you the first time you make them. The good news is, this is one of those easy recipes you can make on repeat. Another bonus? They’re perfect to add to your favorite meals rotation but also elevated enough to make for a special occasion.

How to Make Truffle Parmesan Fries
When my son first asked me if I could make parmesan truffle fries I thought it may be complicated, but turns out, I figure out a method that is super easy! Now I’ve perfected my methods into easy steps and I cannot stop making these! Here are my easy steps:

- Slice the potatoes into fries. I don’t stress too much about the uniformity of the size of the fries. I mostly prefer a fairly thin fry, but if some are a little thicker it’s no big deal.
- Fill a large bowl with water and some ice so it’s nice and cold, and submerge all of the cut fries in the water. Let them rest there in the cold water for an hour. This is important to remove excess starch and create crispy fries.

- Preheat your air fryer to 375 degrees (if you don’t have a preheat setting, just turn it on at 375 for about 5 minutes).
- Now you will want to work in batches based on what fits in your air fryer in one even layer: Remove that small amount of fries from the water and pat them dry with a paper towel (or clean kitchen towel). Leave the rest in the water (if you remove them too early and pat them all dry, they will start to brown before you can cook them).

- Toss the small batch that you dried in a bowl with a little olive oil, salt and pepper.
- Add to the air fryer in one single layer.
- Cook for about 15-20 minutes or until crispy and golden brown.

- While your first batch is cooking, you can make the parmesan truffle mixture. Combine truffle oil, parmesan, parsley, salt and pepper in a large bowl (because you will be adding fries to this bowl). It will be clumpy!

- When your first batch of fries is done, transfer them from the air fryer into the bowl with the parmesan truffle mixture, and toss the fries in the mixture. Even if it doesn’t look like it’s really sticking, it is! You will get the flavor and some small clumps/specs of the parmesan/parsley mixture. Transfer the fries out onto a plate or platter. The rest of your parmesan truffle mixture will remain in the bottom of the bowl for the next batch.

- Repeat this process until you’ve cooked all of your fries (dry your next batch of fries, toss with olive oil, salt and pepper, air fry and then toss in parmesan truffle mixture).
- While cooking the batches, you may want to keep the cooked fries somewhere warm (I normally just sit the plate inside the microwave with the door shut but you can also put them on a baking sheet inside the oven).
- When you’re finished with all of the fries, crumble any of the leftover parmesan truffle mixture over the top of the fries.
- Serve immediately and enjoy! You can add your favorite dipping sauce, but we don’t even feel like these need a dip!
Note: If you want to deep-fry your fries and then toss them in the truffle mixture, by all means, go for it. Air-frying is the healthier alternative, but you can adapt this recipe and toss any crispy french fries in the parm truffle mixture.

How to Store Leftover Truffle Fries
These are best enjoyed fresh, but you can cover and keep in the refrigerator for 3 days. Once they are cooked, they will not freeze well. To reheat, pop them in the oven or toaster oven at 350° for 3-6 minutes just to crisp them back up.
