How to Make Sausage & Spinach Breakfast Casserole

Whether it’s for a special occasion or just because you want an easy breakfast for the next few days, this sausage, bacon, and egg casserole is the ultimate breakfast. You won’t be disappointed. You can jump to the recipe card to get started now. Here are the easy steps:

  1. Cook sausage until cooked through and slightly browned, breaking it up into small pieces while cooking.
  2. Cook bacon, then chop it into small pieces.
  3. Preheat oven to 350 degrees F. Grease a 9×13-inch casserole dish with butter or cooking spray.
  4. Sauté onion over medium-high heat until soft, about 5 minutes, then add garlic and cook until fragrant, about 30 seconds. Remove from heat and set aside.

  1. In a large mixing bowl, whisk together eggs, milk and seasonings. Fold in hash browns, cheese, onion mixture, cooked sausage, and bacon.

  1. Chop or tear spinach into small pieces and fold into egg mixture until evenly distributed.

  1. Transfer to prepared baking dish and bake uncovered for 45-55 minutes or until the center comes out clean when inserted with a knife. I recommend checking it after 30 minutes and to continue monitoring. If the top starts getting too brown before the center is cooked, tent with aluminum foil.
  2. Remove from oven and let it cool for 5-10 minutes before serving. Use a spatula to cut and serve individual servings.

Variations & Substitutions

This classic breakfast casserole recipe is the perfect dish for so many occasions, and one of the great things about them is how customizable they are. I love this recipe exactly how I make it in the recipe card below, but here are some ideas for customizations:

  • Swap the meats: You can make this with just sausage, just bacon, or skip the meat altogether.
  • Swap the veggies: If you don’t like spinach, use whatever kind of vegetable you like! I have done green and red bell pepper in the past.
  • Spice up the cheeses: If you want a kick to your casserole, you could try something like pepper jack or colby jack. I would recommend doing a mixture of cheddar and whatever spicy cheese you like. You can also elevate this dish by opting to buy a block of cheese and shredding it yourself, versus buying shredded cheese.
  • Spice it up: I just use salt and pepper (generously) in my casserole, but you could also add additional spices to change the flavors. Garlic powder, onion powder, paprika, and crushed red peppers come to mind as good ideas.

Easy Tips for the Best Sausage Casserole

  • If you make this ahead of time and store it in the refrigerator until the next morning like I do, take it out and let it come closer to room temp before cooking. Otherwise, you may need to increase your bake time.
  • If you need to increase your bake time, watch the top for browning and tent it with foil once it looks good. This will allow the center to keep cooking without the top getting over done.

What to Serve with Breakfast Casserole

Here are some ideas:

  • Fresh fruit
  • Toast
  • Top with your favorite hot sauce
  • More eggs or breakfast meats on the side
  • Something more sweet like a french toast casserole

How to Reheat Breakfast Casserole

There are several ways to reheat a breakfast casserole. I personally love having casserole leftovers, it makes for sure an easy breakfast! If you are reheating the entire casserole, before you start the reheating process, always let your refrigerated casserole or frozen casserole sit out until it reaches room temperature. This is a good idea because it helps the dish reheat more evenly and prevents cold spots in the center. Make sure it’s been stored properly in an airtight container and kept at safe refrigerator temperatures,

Oven Method (Recommended if you are reheating a large amount of casserole, for best results)

The oven method is the best way to reheat a whole casserole or over half of it:

  1. Preheat your oven to 350°F: a moderate temperature that gives best results without drying out your dish.
  2. Place the leftover casserole into an oven-safe dish or baking dish (it’s likely already in one if you’ve already baked it).
  3. Cover the top of the dish with aluminum foil to keep moisture in and prevent a dry casserole.
  4. Heat for 20–30 minutes for small portions. For a whole casserole or large portion, allow 30–60 minutes of baking time.

For the dish to be hot throughout, it should reach at least 165°F.

Microwave Oven (Easy Way for Small or Individual Portions)

If you’re reheating individual portions, the microwave oven is a convenient way to go:

  1. Transfer the leftover casserole into a microwave-safe dish.
  2. Cut large pieces into smaller pieces or mix together so it’s not in one large block. This helps ensure even heating, avoiding cold spots.
  3. Cover with a paper towel.
  4. Heat on medium heat for 1-1.5 minutes.
